The role of food in defining our relationships to our family, community, nation, and world. How food underlies much of the political, economic, and social struggles throughout the world.
Undergraduate nutrition and food system minor students have limited options to meet the “nutrition” topic requirement. Currently, only one course, taught every other year in Anthropology, meets the requirement. Graduate students interested in nutrition have limited options as well. Currently, no graduate courses at the university focus on food and culture in particular.
