David Shields publishes new book in Southern food studies

English professor teams up with chef Kevin Mitchell to coauthor Taste the State: South Carolina’s Signature Foods, Recipes, & Their Stories

Congratulations to David Shields! Carolina Distinguished Professor of English and Chair of the Carolina Gold Rice Foundation, Shields has devoted over twenty years to researching and recovering ingredients once essential to Southern cuisine but now lost to us. His new book, Taste the State, is coauthored with Kevin Mitchell, the first African American chef instructor at the Culinary Institute of Charleston.
