Students from multiple disciplines (e.g., nursing, engineering, business) are welcome. **Students should be prepared to provide their own transportation to the course’s site visits.**The goal of this course is to explore entrepreneurship in the context of the food and beverage industry, in both theoretical and practical terms. The $2 trillion US food industry is notoriously choppy for start-ups and small to medium sized businesses. Students will be immersed in this competitive industry and explore the keys to success. The course will examine entrepreneurship through identifying how opportunities are discovered, analyzing the conditions of markets and industries that must be weighed in choosing to enter them, and learning about the resources needed by the entrepreneur to establish a new venture and build it into a successful enterprise. Students will have the opportunity to work closely with a variety of entrepreneurs in the food industry located locally and nationally. The course will include unique opportunities to meet directly with the owners of businesses such as smallSUGAR, Birds and Bubbles, and Il Focolare Pizza, as well as tour the Alcohol Ice Cream Co.
