Notes:
**There are no prerequisites, and the course can be taken towards the Italian Minor.**This course will examine the relationship of climate change with a variety of factors such as terroir, food insecurity, food waste, and the preservation of food cultures. Italian Food Culture has a long and varied history, however there are certain unifying elements that are not only relevant today but hold the key to combatting these issues. The study of Italian food culture provides a lens through which we can better understand the history and culture of Italy as well as the global implications of climate change in food systems.
